Plant based Diet mmmm

Plant based diet is amazing Started off the day with a spinach , banana, flax smoothie! Made a Veg , bean stew , a Veg Bean chili for through the week . We feel so energised with this and weight is dropping off, plus we don’t feel as though we miss out on anything Love it try it .. Start f a busy week Here with my business Bricks4Kidz, After Schools in 4 Schools and just sent out emails to meet with other schools , we are booking in to April next year for the in School classes.

Eating right, getting exercise and lot of sleep is important for mental and physical well being We start of the day with a walk in the trails it is just so beautiful out there, I wore gloves today as there was a wee nip in the air, as yet no snow, I hear Calgary go snow!! I am going to head to Walmart to buy some yarn and start a #Hugs4Cops Blanket.. I am also going over my lesson plans for the Simple Machines ..

Davids BBQ Ribs My Macaroni salad and 2 x baked potatoes & fresh bread

my Macaroni Salad varies from time to time ,

1 1/2 cups macaroni, today I chopped 3 spring onions( Green Onions) some times apple or celery but the most part its onions Aged cheddar, a good 2 tsp horseradish, seasoning salt and mayo some times instead of horseradish I use wasabi its amazing

I baked bread and am boiling 4 medium potatoes , and making twice baked potatoes , to do this you boil potatoes with the skins on them I will half if they are large today I didn’t I boil them approx 45 mins then run cold water r over them to cool. once cool, I half the potatoes, scoop out the centres an place in a large dish, add you fillings , your choice, I love adding tuna and green onions always a little garlic to the potatoes and fill the potatoes skins and sprinkle cheese on top bake in oven 25 mins or so until crispy and golden. David really loves these quite often this is our main meal along with a garden salad of veggies and dip ..

David takes great pride in his ribs some times smoked ribs some times BQ ribs not sure todays .. Oh boy what else can happen , the water tank is leaking so David is fixing it so I’m doing the ribs never done. Ribs before. So here goes! I will tell you after supper how they were.. OG MY GOSH!!!! They were so tender and amazing with a little smoky Flavour !!

  • Marinade

Katie and Aaron are new parents and are doing an amazing job with their new baby, big sister grace ( springer) is being a good bog sister to.. Kate and Aaron love to cook and have some really great family dinners .. From the day Kate and Aaron met they had a real connection and have been growing from each other daily. Gracie is Aarons first dog he took the dog ownership to the next level, Miss Gracie is George’s big Sister, same parents different littler.. David gave Aaron a smoker and wow some of the recipes Aaron does are amazing He really like garlic lol Katie is an amazing young lady everything she does she does extremely well .. One of the proudest days of nay life She was a stunning bride Now Aaron and Kate are parents, and Asher is absolutely perfect I am one proud Gram I love my family

Butter Chicken About a month or so ago Save On Foods ad the large box of chicken breast on for $19.50 reg $39.00 I got a deal, why not.. I used 3 chicken breast for the Butter Chicken, say $10 a can of tomatoes $0.97 Walmart 1 1/2 onions ! Bag at walmart $1.87) say $0.50 1 stick butter to cook onions and chicken $1 . 2 table spns SKYR $0.50 , 1 jalapeño $0.50 , a little sugar spices $15.34 I did a double batch with these ingredients it will do 6 adults .. Ill make rice Id say all for under $20

Spaghetti sauce again I made a double batch this will feed 8 adults! 2 cans of tomatoes @ $0.97 x 2 1 can Tomato paste $0.67 Ground pork 1 1b on sale $5.99 1 onion $0.50 , oregano from my garden, 1 tbl spoon garlic $0.25 a little salt Pkg spaghetti $2.00 $11.35 Not to bad hey I will make a salad from produce out of the garden , plus I have Naan Bread In the freezer I made last time I made butter chicken,

Shirley Valentine Chips n Egg. David’S favourite meal.

Davids first day off so I asked what he waned for supper, Chips n egg .. One of our fave movies is Shirley Valentine .. We must have watched this movie 200 times maybe more it our go to feel-good movie!! Each time we said Oh I really want to go to greece.. We got the mane of the tour bus Manoula’s Beach Hotel; and them we booked out Greece vacation it was a mid September !! 4 nights in Athens, 10 days in Mykonos .. We stayed where the movie was filmed, the tavernas where Shirley is now called the hippie Fish , Was Sunset Taverna.. We drank wine on the beach, we go to know the owner of the Taverna and the owner was in the movie, His name is George and he carried shirley’s table and chair to the beach so she could drink wine , by the sea.. Chicken Pot Pie

Well I was going to make Chicken soup as I boiled the chicken carcas last night , but I also watched Jamie over 30 min meals .. He made a chicken pie. Here is my version of it , Jamie used Mushrooms, Not I..

2 chicken breasts, left over from chicken , stock from boiled chicken bones , I add 1 small leek, 2 stalks of celery onions and carrots left from trivet, 1 small pepper (orange one ) add chicken stock, salt ,pepper, garlic a little flour to thicken the pie filling and 2 tbl spns light sour cream, Jamie uses fresh cream!! place in pie dish .. I bought the puff pastry as it is time consuming to make, roll it out so as bigger than your dish then roughly fold sides in , making it look really rough and ready, puff pastry is very forgiving,, I added a little decor on top , funny so did Jamie Oliver, I got a few giggle at Jamie , Most of the time I cut the pastry making it tidy but mot of the time put a rose and leafs as decor.. Also a salad from my garden!! We had a side of my home made baked beans they are delish!!

We decided to change our Diets about 3 rs ago whenI got sick and I was scared I thought I had cancer, It was just before evacuation the Fort MCMurray Fire, So lots of delays with Drs appointments and tests!! that was a crazy year, My Dr said Ann you have to find a way to relax, so he said how about Yoga, i did this a little,I felt like a human pretzel.. Still do a little yoga! .. I then found a bag with wool and Crochet hooks from quite a few yrs ago.. So I made the grand Kids (Colin and Bailey only had 2 at the time ) I crochet blankets for them. Bailey said Oh Gram this is like a big warm hug!! So Rewind a few yrs back 2013 I think it was?? EPS Police Dog got Killed Quanto!!, My heart ached, I read the handlers story, I am not going to lie I cried and hugged my dogs.. I knew I had to do something, in my small way!!

Kate and I did a Scrap Book Collage for the police dog handler and on it was a msg from the dog to the handler and a msg from the handler to the dog, Pics of the dog and his handler,I had help from an amazing EPS officer ty Sir.. I presented this to one of the EPS Dog handlers, it was quite an emotional moment. Ohh my, for some reason My heart went back to that!! I got to thinking there is a lot of hatred in this world towards Police, how can I help!! Light went on .. Well Bailey said my blanket was a Big Warm HUG!! I Have it I will crochet #Hugs4Cops Blankets every stitch a hug from me telling them I care, we care and we appreciate, respect their work.. I have had requests for from friends and family of police officers requesting a blanket for someone with PTSD, or I follow them on social media, amazing people . I some times customise to their police colours, sometimes colours attract me.. I have got a lot better at crocheting it is an on going learning experience.. I don’t do this for recognition, I do this because I care and there is to much hate towards police in this world.. I have received 3 Challenge coins , i was resented to be By an amazing officer and gentleman From @EPS AFPAElliott , the other by Chief Mike Serr Abbotsford Police , the 3rd one was from Kitimat RCMP from an amazing officer Thank you all I love y’all !! I have had a couple of radio interviews and one by the Gazette the RCMP Magazine, I am truly humbled .. On with my crusade I guess after Nov 27th I will have a lot of recovery time after surgery, so Im thinking more #Hugs4Cops Blankets Every Stitch a Hug!! More to follow I have a Bricks 4 Kidz Class

  • Black Bean Burgers again a recipe is an idea one way
  • 16 tbl spoons cooked or 1 16 oz can of black beans mine were dried beans black beans place them on a cookie sheet place them in a 350 oven for 15 lions to dry so the soggy or mushy
  • in a bowl add beans mash with a fork,
  • 1/2 red pepper diced
  • 1/2 small onion diced
  • 1/2 cup bread crumbs
  • 1 egg
  • hot sauce your choice
  • lea and perrins sauce (Worcestershire )
  • garlic
  • salt and fresh ground black pepper

Mix with spoon the form in to bean patty’s I freeze mine until needed Remainder of black beans I cooked may go in to a Veg Chilli, one way I love black beans in place 1 cup per person in to microwave or pan to heat up add about 1 tbl spn malt vinegar black pepper add hot sauce to if you like enjoy ! Yummy a great snack on bonfire night Nov 5th BTW My Birthday is Nov 4th I always got Fireworks for my Birthday Hmm

Baked Beans

  • Place 2 cups dried navy beans in pressure cooker or soak overnight for about 10 hrs
  • 2 cups navy beans
  • Small can plum tomatoes oureed
  • garlic to taste I used 1 tbl spn
  • 2 tbl spns nutritional yeast
  • hot sauce
  • smoked paprika about 1 tbl spn to taste
  • give a stir and VIOLA you have baked beans , full of smoky goodness for these chilly days

When I roast my chicken I put a trivet in the bottom of the roasting pan , this elevates the chicken

I also halted an apple put half in the cavity of the chicken along with a small orange this will make the chicken juicy and very tasty .. I am also making roast potatoes, Mash, Yorkshires and gravy, The grave tastes amazing! it isn’t the same cooking for just David and I , but these shifts are long and it is 7:30 by the time he gets home !! Cooking with Left overs

Today I took a look in the fridge there is leftover Minced Turkey meatloaf , some converted rice hmmm I chopped a celery stalk, a small onion, a small hot pepper, Swiss chard from our garden, cherry tomatoes from out garden, and parsley from our garden.. a little Garlic, fresh ground black pepper and a little sesame oil there you have tonights supper #Plant-based and #healthy #Cookfromscratch Jamie Oliver I would love to cook with you!!

Blast from the past

David was working yet again another long day at site.. Hmmm something hearty , healthy, I came across my Miracle maid electric Skillet, I still have it, Im going to do the first Miracle maid dinner we had, when we bought these pans 35 yrs ago.. Very nostalgic

I made a Turkey, Quinoa meat loaf, the original was with ground beef I used ground turkey this time , carrots, turnip and potatoes all done in the same pot.. Oh my gosh the smell was amazing and took me right back to when I was pregnant with Victoria and we bought this set of Miracle mad pans and we are still using them. David really loved supper

My Grandkids, My Family

We now have 3 amazing grand kids, they are everything to David! We love taking them on a road trip, doing fun tings Cooking with them is one of them, memories and teaching them a little about food and the nutrition! Most of all having fun times with them , Bailey and I one day will see Luke Bryan , See Ellen Degeneres .. Colin would love to meet and be on Top Gear lol Asher I think is going to be a hockey Player I have the most amazing husband in the world .. My family My world, my life

Then Asher was born july 6th I look forward to the sleep overs and making memories with him My mom would have just love these guys

Living so far away from family, your friends become your family, hence all the sons and daughters I have as i usually semi adopted their friends.. When I worked in the Hospital in Kitimat one of the first people I met was Ken Maggs, it was his first day in the Xray Dept and my first day in dietary, we got totally I invited him over for supper , we had a lot of adventures, lol on his boat down the Douglas Channel!! Most of all a true friendship was born, Katie was 18 months old whenI went to work at the Hospital, Now a mommy herself, uncle Ken and Christine sent Asher a gift this week, We may live in different provinces now but we do stay in contact .. It was food that forged this friendship!! Ken spent may a weekend with us..

Veggiee Pasta Sauce & Home made Pasta

  • This is a meal I make quite often Home made Pasta, there are a lot of different recipes , I wing it a lot of times .. My Veggie pasta sauce This one has few ingredients
  • 6 fresh Roma tomatoes
  • 1 med onion
  • hand full fresh spinach
  • garlic basil,
  • Home made pasta this was a Jamie Oliver recipe its is fresh tasting very Italian !!

7 Veg pasta sauce another jamie oliver recipe I love this one i add and change veggies

  1. 2 small onions.
  2. 2 small leeks.
  3. 2 sticks of celery.
  4. 2 carrots.
  5. 2 courgettes. (Zuccini)
  6. 2 red peppers.
  7. ½ a butternut squash , (600g)
  8. 2 cloves of garlic.
  9. olive oil 
    2 teaspoons dried oregano 
    4 x 400 g tins of plum tomatoes
  10. I just use 2 large tine diced tomatoes packed with nutritious veg, this has to be one of the easiest ways to get extra veggie into our diet,
  11. Prep veggies
  12. large pan on a medium heat add 2 tablespoons of oil. Add the garlic and oregano, fry for 1 minute, then add all the prepped veg.
  13. Cook with the lid on for 25 minutes, or until the veg are soft but not coloured, stirring regularly. 
    add tomatoes, i add 2 cans ( Use tomato cans) water swirl around and pour into the pan. 
    Simmer for 25 minutes, or until the sauce has reduced. Leave to cool a little, then blitz until smooth, taste, and season to perfection. Divide in to freezer bags and freeze it is amazing and so tasty TY Jamie Oliver for this amazing dish And Save on and super store for the amazing produce

Pan Haggerty again My Way lol

I love to cook, I love food, for 3 yrs now we have been pretty much #PLANTBASED I cook from Scratch, I have ben watching a BBC TV series or a few of them back in time the latest was back in time for tea and it takes place in the north of England, its about going back in time and how people lived and ate eat it is very interesting a recipe the made was Pan Haggerty , once again I made it my way it was amazing

  • 4 large potatoes sliced
  • 3 stalks celery diced and cook with onions
  • 1 large onion sliced and cooked
  • 1 cup cheese
  • 1/4 medium cabbage sliced
  • 4 rashes bacon diced and cooked
  • 1 1/2 cups Campbells mushroom stock
  • salt, pepper and garlic
  • a plod of Lea and Perrins
  • later in oven proof dish cover with cheese
  • bake at 365 for about 1 hour until crispy

Fish Pie with Cauliflower mash and Cheese Yummmy

  • I always remember my mom making fish pie with parsley sauce Yummy and a very creamy mash potatoes , she go out to the fish van when it cam around, bought i believe it was Haddock , some fish cakes and kippers for breakfast !! I make mine a little different , I use mashed Cauliflower instead of Potatoes sometimes and salmon and shrimp with a wee bit of smoked salmon to add a wee bit of a smoky taste Mmmmmm
  • 1 Lg Cauliflower
  • 1 carrot 
  • 2 sticks celery 
  • 150 g Cheddar cheese 
  • 1 lemon 
  • 4 sprigs of fresh flat-leaf parsley 
  • 300 g Cod or salmon fillets , skin off take out bones
  • 125 g raw shrimp with out tails
  • 1 cup of cream or if your watching your diet skim milk
  • 2 tbl sons flour to thicken
  • olive oil 
  • 1 good handful of baby spinach , optional
  • Cook Cauliflower , mash and put to one side add salt , pepper and a little butter
  • Grade carrot and dice celery , grate cheese also
  • place fish and shrimp in a pot with olive oil , cook until ready add parsley ,celery , parsley and shrimp add flour and cream or skimmed mils add a squeeze of lemon
  • place in oven proof dish , place mashed cauliflower go top of your fish mix, sprinkle cheese on top and bake 40 mins in a 365 oven

A British/Cornish Pasty My way !!!!! Cheese and potato Pie with HP Sauce

As you know we like to cook pretty much everything from scratch little or no fast food and pre packed convenience foods.. One of my face things to cook and freeze are pasties I use ground chicken or turkey dice potatoes, celery diced , carrots diced and finally chopped onions.. The other pasty I like to make is a Cheese, Potatoe and Onion Pasty

Cook onions and potatoes together when done add butter salt and pepper grated cheese I like to add old cheddar and Asiago cheese ! I also add a spot of hot dog mustard to the mix

  • 500g/1lb 1oz plain  
  • 120g/4oz vegetable shortening
  • 1 tsp salt, pinch pepper
  • 25g/1oz margarine or butter
  • 175ml/6fl oz cold water 
  • 1 free-range egg, beaten with a little salt (for glazing)
  • 1 1b ground chicken or turkey
  • 50g/12oz russets
    200g/7oz carrots
    175g/6oz onions
    salt and freshly ground black pepper, garlic to taste
    knob of butter or margarine

Family Tradition

Just came across these pics it is something my mom did every easter Starting in Dec shed start saving Onion Skins the darker the better . They were Called Pace eggs I thought the world did this until we emigrated to Canada and it is very much a Northern England tradition

Pace-Egging is an ancient Lancashire custom once widespread, and is still to be found in parts of the county today.

Pace-Eggs are eggs specially decorated for a festival at Easter-time, and is a centuries old tradition.

The eggs are first wrapped in onion skins and boiled, giving the shells a golden, mottled effect. This is the traditional way of decorating the eggs, though today they are often painted.

Pace-egging was taken seriously…for example in the household accounts of King Edward I there is an item of ‘one shilling and sixpence for the decoration and distribution of 450 Pace-eggs!’

At Grasmere, Cumbria, in the Wordsworth Museum there can be seen a collection of highly decorated eggs originally made for the poet’s children.

Usually Pace-eggs were either eaten on Easter Sunday or handed out to the Pace-Eggers.

In Avenham Park in Preston the crowds still gather today to watch the old traditional egg-rolling contest down the grassy slopes.

The eggs are hard boiled and then decorated, and hundreds of children today compete to see whose egg can roll the furthest without cracking.

A warning to all… empty Pace-egg shells must be crushed for they are popular with Lancashire witches who use them as boats.

Plant Based Eating Ratatouille

I went to the drs for a check up. I walked in said, I have an apt to see the dr. My dr came out to speak to his receptionist!! He looked at me turned around. Looked back, then looked back at me again !! I thought hmm. That’s strange. I went in to see my dr. He had a huge smile on his face. He said. OK. What have you done. Me. Nothing. You look younger amazing!! Me. The only change is our diet we’re about 80% plant based diet. For me this has made me aware that what we eat Does really help you feel and look better. We eat very little processed food. I cook from scratch. Bake bread weekly. . Plantbased Is the way to go. We do have occasional fast food not a lot !!

Butter Chicken

I was bored, so I went in to the pantry grabbed the tomatoes and spices, went to the freezer grabbed some chicken and away we go I love to watch cooking shows and one that I was watching was Final Table and one of the recipes they did was a Butter Chicken and the different chefs had to make this, their way! .. I looked over a few recipes and came up with mine ….

  • 1 cup butter, divided
  • 1 onion, minced
  • 1 tablespoon minced garlic
  • 1 large can tomatoes pureed
  • 3 cups heavy cream
  • 2 teaspoons salt
  • 1 teaspoon cayenne pepper
  • 1 teaspoon garam masala
  • 2 tsp cumin
  • 4 skinless, boneless chicken breast, cut into bite-sized chunks
  • 2 tablespoons vegetable oil
  • 2 tablespoons tandoori masala
  • Salt and pepper
  • 2 tsp sugar
  • Melt a few tablespoons of butter in a skillet over medium heat. Stir in onion and garlic, and sugar cook slowly until the onion caramelised to a dark brown, about 15 min.
  • Melt the remaining butter in a saucepan over medium heat along with the tomato sauce, heavy cream, salt, cayenne pepper, garam masala, & cumin Bring to a simmer, then reduce heat simmer low for 35 mins
  • Place Cubed chicken in a pan with remaining butter and Tandoori Masala , cook until done then mix in with the Sauce.. I leave overnight to allow spices to soak in to the chicken
  • I used Concerted rice for this

Converted Rice

  • Parboiled rice might sound like it’s precooked, but it’s not. Instead, it’s processed quite differently from other types of rice. The resulting grain is cooked and served just as you would white or brown rice. However, because of the special processing, parboiled rice is a better source of fiber, calcium, potassium and vitamin B-6 than regular white rice.
  • 3 cups plain flour
  • 2 tsp dried yeast
  • 2 tsp sugar 1/2 cup warm water
  • 1/4 cup SKYR or plain yought
  • salt pepper 1 tsp minced garlic
  • put sugar yeast and warm water in a pyrex jug leave 10 mins to ferment
  • mix with dry ingredients.. Knead on floured surface until dough is smooth place in clean dish to raise approx 1 hour then divide in to 1 inch balls and roll out. In skillet place olive oil and garlic , cook for about 2 mins each side . I also brush each side with a little olive oil and garlic!!!

This is one of those comfort food dishes, I think my mom would have loved this..
