Back in the 90’s I worked in the hospital in Kitimat BC in Dietary as a Dietary aide, I loved it, I learned aot ! I worked with some great ladies, we all worked very hard , I even got to be relief cook 1 and 2 .. I learned a few swear words in Mexican & Portuguese. I got a couple of really great recipes one of which my kids and grand kids love, Tuna Roll.. I make my own scone mix 2 small can tuna in water, i can mushroom soup ….
- 3 cups of flour
- 2 tbl spn olive oil’
- 2 tbl spn baking powder
- pinch salt
- 1 cup milk
- little water
- mix together dry ingredients
- 2 cans Tuna in water
- 1 can mushroom soup use half
- Roll out to 1/4 inch nd spread tuna mix
- bake 375 for approx. 30 mins
- Cheese sauce mmmm
- 2 oz butter
- 3 tbl spoons flour
- 2 splods Hot Dog mustard
- 1/2 cup grated cheese old cheddar
- 1/4 cup grated asiago cheese to add a nip
- 1 tsp chopped garlic
- make a rue with melted butter and flour
- 1 cup milk
- add milk slowly















Mediterranean Pie another Hospital recipe
- 2 pie crusts
- 1 med onion chopped
- 1 tsp chopped garlic
- 1 bl spn minced garlic
- 1 oz butter1 12 oz pkg frozen spinach
- 8 oz sliced ha8 os shredded cheese I like cheddar
- red pepper cut in to strips
- 4 eggs slightly beaten
- Drain defrosted spinach well and stir into onion mixture.
- Layer, in order – ham, cheese, spinach, red pepper.
- Pour beaten eggs over the layers. Reserve a small amount of egg to brush on top crust.
- Put top crust on the pie.
Decorate with left-over pastry if desired.
Seal edges. Brush with reserved egg. Make slits for steam. - Bake at 400 degrees F. for 35-40 minutes or until pastry is golden.
