Turkey meatloaf Once again, budget friendly

Tonight I made a really old fave, I used my 35 year old Miracle Mail Electric Skillet> We bought the Miracle Maid Set of Pans when I was about 7 months Pregnant with Victoria, who is turning 35 soon . The first thing we learned to make was the Meat loaf, with Carrots, Potatoes , Onions and Lima Beans. Only difference I used Lean Ground Turkey from Super Store it comes in parts of 4 $10. The Photo above is pre cooked. A family fave love doing this ..

  • pinch Garlic
  • 1 lb baby Carrots,
  • 1/4 bag small carrots

  • tomato sauce or puree I glazed the top with a BBQ sauce yummy
  • Again your looking at conservatively under $10 this did 4 meals and davids lunch .. The Smells in my house were amazing
  • I cooked at 225 on the skillet for about 1 1/2 hrs

Beef Stew then Beef Curry Gotta love Cooking on a budget

Beef Shank, not a cut I would normally buy. David saw the Beef Shanks and he loves a deal. How to Cook Beef Shank Steak. … They’re too tough for grilling, but like chuck steaks, they’re ideal for braising. The long, slow cooking process softens the tough muscle fibers and connective tissues, leaving the meat fork-tender with a luscious texture. I added 2 medium onions, 3 large carrots, marinated the shanks in garlic, salt and fresh ground black pepper.. I added more minced garlic and braised the veggies , then added the whole Beef Shanks added 900 mis beef stock and the All in one pot was set for 4.5 hrs .. Once done I took out the 4 beef shanks and diced them, then added them back to the veggie mix and I made mash potatoes, this was one of the tastiest stews I have ever had.. There was Ian our son, David and I for Supper Sunday. When putting the leftover stew in the fridge David said “ you have to make a curry from the left overs..

Chowmein, Shrimp Fried Rice, Veg Spring Rolls and Torpedo Shrimp I guess a little Chinese

I try to plan out supper through the week, especially when David is working.. I like to make sure he has well balanced meals to take to work, I like to cook from scratch .. Davids fave is noodles. Spring Rolls were 1/4 red cabbage 1/4 green cabbage 1/2 small onion and 1 carrot grated. 1/2 red pepper diced ,garlic, rice wine vinegar and a little sesame oil

I make the spring rolls according to the veg I have, all are good .. This will be in Davids lunch for work tomorrow..

I also make a Chicken, Leek and potato Pie .. This is amazing , I love to use a lot of leeks as they are so versatile.. zz i had 2 chicken breasts cubed and marinated in garlic and fresh ground black pepper, then fried in a mix of butter and olive oil. 2 leek sliced thinly, 1 small onion , 1/2 red pepper diced .. 1 large potato grated in to the mix. I sauté the cubed chicken and garlic until cooked then add veg once cook let cool mean while I make pastry and get the pie shell ready ..

DIRECTIONS

  • preheat oven to 350 F degrees
  • pour flour into medium bowl, add margarine using pastry blender until lumps are slightly smaller than pea-size.
  • Add water. mix gently with fork until dough comes away from the sides of bowl. sprinkle a little flour onto top of pie dough. 
  • cover pie dough with another sheet of wax paper. 
  • roll out so the pie crust is level, in another. (about 11 or 12 inches in diameter). do a top and bottom
  • Fill with any pie filling! Cook 375 until golden brown

Multicultural kitchen Borsht, Butter Chicken and Naan Bread

Quite the day cooking ,David has even asking for Borscht soup, so I started to make my soup.. First I put on a great play list a little 80’s hits & Phil Collins tunes

  • 1/4 red cabbage sliced thin
  • 2 large carrots diced
  • 1 large onion diced
  • 4 russet potatoes diced
  • 2 cans beets in water diced and use water from on can its sweet and yummy
  • Meat optional
  • 1/2 cup red wine vinegar
  • 900 mls beef stock
  • 1 tbl spn minced garlic
  • 1/2 cup fresh dill or i used dried about 2 tsp
  • fresh ground black pepper to taste

One of my favorite things about Borscht is the deep ruby color that comes from the cabbage and beets! I also love that it’s incredibly healthy and packed with protein (from the broth and optional meat), iron (from the beets), vitamin C, potassium and vitamin B6 (from the carrots) plus fiber and vitamin K & C (from the Cabbage and it is healthy to With this I made twice baked potatoes with a can of tuna , spring onions and a little cheese

Cheese and Potato Perogies in a Mushroom Sauce!!

Def a family fave Perogies, by request I sliced a bacon n cheese smoky , fried onions and 3 strips of bacon diced . Meanwhile coking the Perogies, I opened a can of mushroom soup , placed it in a saucepan with 1 cup of buttermilk , a good sprinkler of seasoning salt, a little cheddar cheese and 2 tbl spoons of Nutritional yeast, cheese without a lot of cheese. I have to try and make pirogies, haven’t tried yet.. I sometimes addd a piece of fennel diced. or a little Pernod .. Grand kids love this meal, i always make extra .. Happy Cooking

Quick and easy lentil Soup

Ingredients

  • 1 teaspoon olive oil
  • 1 small onion, finely chopped
  • 1 carrot, finely chopped
  • 1 celery stalk, finely chopped
  • 1 tsp minced garlic
  • salt and fresh ground black pepper
  • i carton 900 ml Veg stock vegetable
  • 1 15 oz can lentils please rinsed and drained
  • 2 teaspoons red-wine vinegar or Cider Vinegar
  • 1 splurge of Worsershire sauce
  • if you want add a Jalapeño de seeded and diced

In a soup pot place oil and diced veggies, add garlic, salt and pepper , sweat veggies for 5 mins on Med heat until soft add stock and lentils takes 15 to 20 mins serve with a salad or sandwich .. Soup is Hearty, Healthy and quick to make also budget friendly!!

Tomato Soup

Ingredients

  • 2 lg cans tomatoes plum or diced if plum cut up
  • 1 medium onion diced
  • large l carrot diced
  • celery stick diced
  • 2 tbsp olive oil
    • salt & pepper to taste
    • 2 bay leave
    • minced garlic to taste
  • 1.2 litres/ 2 pints hot vegetable stock (either made with boiling water and 4 rounded tsp bouillon powder or 2 stock cubes) or buy the stock ready to use
  • place olive oil , onions, celery and carrots in to soup pot, sweat until soft add tomatoes, bring to boil the puree tomato soup . serve with a dollop of soups cream this is amazing very budget friendly, healthy hearty and tasty,

Mushroom soup is quick and easy to make . I got White Mushrooms, Oyster Mushrooms and a pot Chefs MIX button, oyster and Chanterelles, dried mushrooms .. soak in 1/2 cup boiling water these were from Western Family and are amazing the boullion was from Super Store .. For these cols days home made soup is the best and mushrooms are also a Super food !! If I know I have a busy week with Bricks 4 Kidz I cook a head..I made this soup yesterday .. it took 15 mins and is in expensive to make !!

  • 500 g white mushrooms sliced
  • 100 g oyster mushrooms sliced
  • 1 pkg chef dried mushrooms
  • 1 onion diced
  • 3/4 of the Vegetable Bullion
  • place dried mushrooms in 1/2 cup boiling water
  • olive oil
  • salt and pepper a little truffle oil
  • place mushrooms and onion in a soup pot, cook for 5 mins add stock and dried mushrooms with water , add a little garlic 1/4 t spn truffle oil
  • salt and pepper to taste when mushrooms are cooked about 10 mins blend add 2 tbl spns light sour cream
  • this will keep in the fridge for 6 days ,

For Lunch today we had the Mushroom Soup with a Salad Sandwich made from my home made bread, which i bake every week some times twice a week.. Eating plant based is fun . We do have meat , maybe 3 times a week , it is an ingredient not a huge part of our meal Stay warm and eat healthy

January 25th is poetThe Bard Of Scotland! Robbie Burns Birthday, Burns night Supper, Last Night we celebrated an early Birthday for the great Scottish Poet Robbie Burns, We had a Bard Pie. As far as i know never been made or named before Davids Creation, we both cooked it , Lamb, Haggis , onions, Tatties and neeps with a peppercorn grave OMG it was amazing, the haggis as it cool congeals with the fat in it but done like this it stayed warm and scrumptious. David used to be a drummer in a pipe band so we celebrate this every year, I remember one of our first Burns nights , it was at Langley hall , it started at Midnight and went on until the early hours, it was a lot of fun.. I remember the bar tender was hitting on me , he said” were you wafted here from paradise, Me “ Nooo Luton Airport said in a Cockney accent, there was a Campari commercial on tv at the time , https://youtu.be/8ydVbn0gMk4

Caviar, Texas Caviar that is and a Bean Stew mmmmm

  • Last night I soaked 3 cups of Black Eye Beans and 2 cups of Navy Beans, I took 1 1/2 cups Black Eye Beans and made Texas Caviar with it , a great snack or meal

Prep: 25 minutes

Cook: 5 minutesYield: 8 servings

Drain and rinse the black-eye beans combine them in a large bowl

Add the jalapeño, red onion and chopped peppers to the bowl of vegetables then pour in the dressing and stir until well-combined. 

Serve the Texas Caviar Place in a container and refrigerate it for up to 24 hours before serving. 

Prep: 25 minutes

Cook: 5 minutesYield: 8 serving

Drain and rinse the black-eye beans and black beans and combine them in a large bowl with the drained corn.

  • 1/2 cup olive oil
  • 1 cup red wine vinegar or cider vinegar your choice
  • 1 jalapeño pepper de seeded and diced
  • I red onion, white onion if you don’t have a red one diced
  • table spoon Cilantro
  • 1 /1/2 cups black eye beans
  • 2 cups salsa medium,
  • 2 plum tomatoes diced
  • 2 tsp Italian spice
  • 1 red ,green or orange pepper diced and de seeded
  • 2 tbl spn diced garlic
    • 1/2 cup Corn if desired
  • mix in a large bowl and cover place in refrigerator for 24 hrs, this is a great snack , or meal putting the good gut Biome

Then I decided to make a Bean Stew, amazing , Hearty and budget friendly

  • 1 1/2 cups Black Eye Beans
  • 2 cups of navy beans
  • 1 small onion sliced
  • 3 large carrots sliced
  • 1/4 red cabbage sliced
  • 2 celery stalks sliced
  • 2 plumb tomatoes diced
  • 6 medium potatoes
  • 1/2 small turnip
  • 3 cups veg stock
  • 2 tbl spns Worcestershire sauce
  • 1 pkg onion soup mix
  • 1 tbl spn minced garlic
  • bring to the boil then simmer for 2 hours on a low heat remove lid 30 mins before to reduce ..

This is am amazing stew , I am going to bake some small cob loafs and serve the stew in the fresh baked cob. Healthy, Hearty and delicious.

What ever Veg I have in the fridge is what goes in to this.. Having said that I always had a wide assortment of Veg .. Try meatless dishes, be creative . Live Laugh and Love .. Eat to Live don’t Live to Eat!!!!!!

Say Cheese…. Sauce my way!

I love to cook , I have to say my cheese sauce is amazing,

  • 4 tabl spoons flour
  • 1/2 stick butter
  • Salt and fresh ground black pepper
  • tsp minced garlic
  • 1 tbl spn Hot English Mustard
  • 2 cups of buttermilk !!
  • 1 cup Cheese your choice I chops afesd and a gouda
  • Make a ru with the melted butter, garlic and flour
  • add salt, and pepper,
  • take pot off heat add scheme and Buttermilk stir and then return to the stove

Now you have a tangy gooey amazing cheese sauce.. for veggies, pasta!!

My kids have grown up loving my cheese sauce, the mustard adds a zing to this and just this weekend I decided to use Buttermilk! Wow what a difference , it is amazing you have to try this

Family Sunday Dinner I love to cook Sunday Dinner

Well I am happy to say that . is the first time since surgery I actually have the energy to bake bread, make Fairy Cakes for Desert, Make soup from the stock I boiled the ham in !! Sunday Dinner also with Cauliflower n Cheese sauce, I make David a White sauce .. Oh Yorkshire puddings to with a green peppercorn gravy!! I also made cabbage slaw for snacks the next few days as Bricks 4 Kidz has in School Classes at Walter and Gladys Hill School here in Fort McMurray “Simple Machines”

Katie and Asher will be over today, with Ian, David and I will be a full table..

  • The Soup I made with the ham stock , is a hearty winter soup, I put 6 whole cloves in the ham covered it in english mustard and placed it in the boiling water, I cooked on a simmer it for 2 hours
  • boiled the Ham
  • ham oil 4 cups water,
  • 2 Packets onion soup mix,
  • 1 Large leek
  • 1 small onion,
  • 12 small carrots diced
  • 3 stalks celery diced
  • 3 large tomatoes diced
  • i large can of peas
  • 1 small purple turnip
  • 1/4 cup dry haricot beans
  • 1 cup dry pot barley
  • 1 tbl spoon minced garlic
  • 3 tbl spoons Worcestershire Sauce ( Lea & Perrin’s)
    • S and P to taste

Simmer for a couple of hours, we will have the soup as a starter with fresh baked bread. Main Ham, Roast Potatoes, Mashed Potatoes, Yorkshire Puddings, Cauliflower n Cheese green peppercorn grave and Butterfly / Fairy Cake cakes as a desert

Chicken Fried Rice Who said leftovers are boring Then a little Garlic Mac and Cheese

After making my delicious Teriyaki Chicken I had 3 Drum sticks left and some rice .. I chopped up some red and green peppers some onion and some spring onion I also added a Jalapeño pepper , I took out the seeds ..

In a skillet ad a table spoon Olive Oil , minced garlic to taste. Add all your diced veggies.. Take the meat of the chicken drum sticks dice then add to the veg. Cook over low heat for about 5 mins then add your cooked rice , I cooked this for about 15 mins on a low heat then added the left over teriyaki sauce from the chicken and added a little sesame oil, salt and lots of fresh ground black pepper .. We had this with a green salad and it did the 3 of us 2 meals ,, Very inexpensive but good to.. Today is very exciting as Colin and Bailey my 2 older Grand Kids are coming to visit and I am making them a Garlic Mac and Cheese, this is amazing and also very budget friendly.. I will serve with lots of raw veggies Yummy cant wait . These pics are from earlier this year .. All home made and amazing …. More pics to come

This soup is a great and warm you to the core in these cold winters evening, it takes about 20 mins to make, I added Cayenne, Turmeric and Cumin to deepen the flavours. Have this with a toasted ham and cheese will dip great with this .. We love Soup and a sandwich ..

Teriyaki Chicken and Breakfast with Jamie Clinch

We had a great Visit this past weekend From Janie Clinch unfortunately it was for a Dinner For Ten Jager , a very dear friend who loved fine wines and food… Jamie arrived Thursday Evening! When I get guests I like to prepare a few things for the fridge, So I made a pot of Spaghetti Sauce, and Teriyaki Chicken Drum Sticks. Great snack

  • 1/2 cupSoya sauce
  • 1/2 cup tomatoe Ketchup
  • 2 Tbl spn Worsershire sauce
  • 3 tbl spns brown sugar
  • 2 tsp minced garlic
  • some times I add Jalepano or franks red hot sauce

Marinate Chicken over night , pre heat oven 250 f, bake chicken in oven approx 1 hour , serve as a snack or with rice and a salad .. I remember when my Mom and Dad came out to Canada for the Birth Of Katie she is now 31!!! My Dad loved the Teriyaki Chicken so much…

A Cumbrian Christmas

Cumbrian Christmas bread

Cumbrian Christmas Bread Im def going to make this .. Sounds amazing

Ingredients

  • 30g currants
  • 30g sultanas
  • 55g raisins
  • 20g mixed peel
  • 3 tbsp rum or brandy

For the ferment

  • 6g active dried yeast or 7g fast action yeast
  • 10g caster sugar
  • 75g white bread flour
  • 150ml warm water
  • 100ml milk

For the dough

  • 400g strong white bread flour
  • 75g caster sugar
  • 2 tsp salt
  • ½ tsp mixed spice
  • 1 medium egg
  • 1 tbsp black treacle
  • 40g unsalted butter, melted and cooled a little
  • Vegetable oil for greasing

Method

  1. In a bowl soak the fruit and peel in the rum or brandy for at least 2 hours.
  2. For the ferment, sift the yeast (if dry) sugar and flour into a bowl, then whisk in the water and milk until you have a smooth batter. Cover with a lid or cling film and leave to ferment for 30-45 minutes or until risen and puffy.
  3. For the dough, sift all the dry ingredients together into a large bowl. Make a well in the centre and pour in the egg, treacle, melted butter and the ferment. Mix well with a wooden spoon until a rough dough is formed (if the dough still seems a little dry after mixing, add a 2 tbsp of water and continue). Knead for 8-10 minutes until the dough is smooth and silky (by hand or machine). Drain the fruit of any excess liquid and gradually work it into the dough at the very end of the kneading time.
  4. Put the dough in a large well-oiled bowl, cover with cling film and leave to rise for 2 hours. The dough should be nicely risen and feel airy, but will not quite double in size.
  5. Preheat the oven to 200C/fan 180C/gas 6. Remove the dough from the bowl and form into a smooth round loaf. Put on a baking tray lined with baking paper, cover with a clean tea towel and leave to prove for about 30-45 minutes. Check the dough is ready to go into the oven by pressing it lightly with a finger. If the impression left by your finger remains, the dough is ready. If it springs back, continue to prove for another 5-10 minutes and check again.
  6. Bake the loaf for 35-45 minutes, covering with foil if it looks like it is getting too brown. Check if it is done by tapping on its bottom and listening for a hollow sound. Cool on a rack before. Serve warm spread with lots of butter.
