This past week was a crazy week, we headed to Edmonton with my Son for Surgery, it went very well, I had am appointment with Dr Wright my Sinus Specialist! That event not to good .. Oh Well gotta head back in 6 weeks .. I got back took out 5 chicken breast and defrosted, I was thinking a head 2 breasts for the soup and I will make a pot of Butter chicken.. I had some chicken stock int he freezer from a chicken I had roasted, Yummy goodness.. I want to make a healthy hearty soup for my son, soooo here we go , We got a great deal on the chicken breast at Save On $19.50 a box 3 KG ( We got 2 boxes reg $35.99 2 chicken breast diced
1 large onion
2 large Leeks sliced thinly
3 large carrots
l small turnip
6 plumb tomatoes
3 stalks celery
2 cups cooked rice
Fennel I used 2 stalks with build sliced very thin
1 pig Knorr onion Soup Mix
1 table spoon garlic minced
fresh grind black pepper
sage sprinkle
Parsley frozen from my garden
1 900 mill Veg Bouillon
Place all veg in Soup pot, with garlic, cook in a skillet add 1 tbl spn butter add chicken and a large sprinkle of sage . When chicken is cooked add to veggies in soup pot, add onion soup mix 2 cups of water and the Veg stock , bring to boil then simmer with the lid on for an hour, taste and if required add more pepper or even a splurge of Lea and Perrin Sauce (Worsershire Sauce ) .. This is an all time family fave and lots of meals out of this pot of soup, I sent some over for Kate, Aaron and Asher.. My mom always made soups in the winter , I guess thats where I get it from right now David is cooking his Chicken breast in Leek Sauce, we love leeks…
