Roast Chicken Sunday Dinner Mmmmmmmm

When I roast my chicken I put a trivet in the bottom of the roasting pan , this elevates the chicken

A ‘vegetable trivet‘ refers to a selection of vegetables, often carrots, onions, celery, which are used as a bed for meat as it braises or roasts. The vegetables serve to impart flavour on the main ingredient as it cooks and can also be used to make a sauce for the final dish. I also halted an apple put half in the cavity of the chicken along with a small orange this will make the chicken juicy and very tasty .. Sunday dinners make me miss my mom (Mam) Sunday Dinners in our house were a family occasion

Why do we have roast dinners on a Sunday? Origin. The British Sunday Dinner or Sunday Roast as it was called, was the main meal of the week. Served in the early afternoon, at this meal, a roast was typically served with Yorkshire pudding and all the glorious fixings like gravy, vegetable dishes and mashed potatoes.

I am also making roast potatoes, Mash, Yorkshires and gravy, The grave tastes amazing! it isn’t the same cooking for just David and I , but these shifts are long and it is 7:30 by the time he gets home !! Cooking with Left overs

Today I took a look in the fridge there is leftover Minced Turkey meatloaf , some converted rice hmmm I chopped a celery stalk, a small onion, a small hot pepper, Swiss chard from our garden, cherry tomatoes from out garden, and parsley from our garden.. a little Garlic, fresh ground black pepper and a little sesame oil there you have tonights supper #Plant-based and #healthy #Cookfromscratch Jamie Oliver I would love to cook with you!!

Fish Pie with Cauliflower mash and Cheese Yummmy

  • I always remember my mom making fish pie with parsley sauce Yummy and a very creamy mash potatoes , she go out to the fish van when it cam around, bought i believe it was Haddock , some fish cakes and kippers for breakfast !! I make mine a little different , I use mashed Cauliflower instead of Potatoes sometimes and salmon and shrimp with a wee bit of smoked salmon to add a wee bit of a smoky taste Mmmmmm
  • 1 Lg Cauliflower
  • 1 carrot 
  • 2 sticks celery 
  • 150 g Cheddar cheese 
  • 1 lemon 
  • 4 sprigs of fresh flat-leaf parsley 
  • 300 g Cod or salmon fillets , skin off take out bones
  • 125 g raw shrimp with out tails
  • 1 cup of cream or if your watching your diet skim milk
  • 2 tbl sons flour to thicken
  • olive oil 
  • 1 good handful of baby spinach , optional
  • Cook Cauliflower , mash and put to one side add salt , pepper and a little butter
  • Grade carrot and dice celery , grate cheese also
  • place fish and shrimp in a pot with olive oil , cook until ready add parsley ,celery , parsley and shrimp add flour and cream or skimmed mils add a squeeze of lemon
  • place in oven proof dish , place mashed cauliflower go top of your fish mix, sprinkle cheese on top and bake 40 mins in a 365 oven
