Chicken Pot Pie

Well I was going to make Chicken soup as I boiled the chicken carcas last night , but I also watched Jamie over 30 min meals .. He made a chicken pie. Here is my version of it , Jamie used Mushrooms, Not I..

2 chicken breasts, left over from chicken , stock from boiled chicken bones , I add 1 small leek, 2 stalks of celery onions and carrots left from trivet, 1 small pepper (orange one ) add chicken stock, salt ,pepper, garlic a little flour to thicken the pie filling and 2 tbl spns light sour cream, Jamie uses fresh cream!! place in pie dish .. I bought the puff pastry as it is time consuming to make, roll it out so as bigger than your dish then roughly fold sides in , making it look really rough and ready, puff pastry is very forgiving,, I added a little decor on top , funny so did Jamie Oliver, I got a few giggle at Jamie , Most of the time I cut the pastry making it tidy but mot of the time put a rose and leafs as decor.. Also a salad from my garden!! We had a side of my home made baked beans they are delish!!

We decided to change our Diets about 3 rs ago whenI got sick and I was scared I thought I had cancer, It was just before evacuation the Fort MCMurray Fire, So lots of delays with Drs appointments and tests!! that was a crazy year, My Dr said Ann you have to find a way to relax, so he said how about Yoga, i did this a little,I felt like a human pretzel.. Still do a little yoga! .. I then found a bag with wool and Crochet hooks from quite a few yrs ago.. So I made the grand Kids (Colin and Bailey only had 2 at the time ) I crochet blankets for them. Bailey said Oh Gram this is like a big warm hug!! So Rewind a few yrs back 2013 I think it was?? EPS Police Dog got Killed Quanto!!, My heart ached, I read the handlers story, I am not going to lie I cried and hugged my dogs.. I knew I had to do something, in my small way!!

Kate and I did a Scrap Book Collage for the police dog handler and on it was a msg from the dog to the handler and a msg from the handler to the dog, Pics of the dog and his handler,I had help from an amazing EPS officer ty Sir.. I presented this to one of the EPS Dog handlers, it was quite an emotional moment. Ohh my, for some reason My heart went back to that!! I got to thinking there is a lot of hatred in this world towards Police, how can I help!! Light went on .. Well Bailey said my blanket was a Big Warm HUG!! I Have it I will crochet #Hugs4Cops Blankets every stitch a hug from me telling them I care, we care and we appreciate, respect their work.. I have had requests for from friends and family of police officers requesting a blanket for someone with PTSD, or I follow them on social media, amazing people . I some times customise to their police colours, sometimes colours attract me.. I have got a lot better at crocheting it is an on going learning experience.. I don’t do this for recognition, I do this because I care and there is to much hate towards police in this world.. I have received 3 Challenge coins , i was resented to be By an amazing officer and gentleman From @EPS AFPAElliott , the other by Chief Mike Serr Abbotsford Police , the 3rd one was from Kitimat RCMP from an amazing officer Thank you all I love y’all !! I have had a couple of radio interviews and one by the Gazette the RCMP Magazine, I am truly humbled .. On with my crusade I guess after Nov 27th I will have a lot of recovery time after surgery, so Im thinking more #Hugs4Cops Blankets Every Stitch a Hug!! More to follow I have a Bricks 4 Kidz Class

Happy Monday to all my followers, near and far Love y’all Lets look after ourselves Mentally and physically, I know in nov Im heading for a big surgery, I’m thinking positive Chron’s/Colitis is no fun, this is one reason why we decided go to a plant based diet , meat is a ingredient hot the huge part of the meal.   • Black Bean Burgers again a recipe is an idea one way
  • 16 tbl spoons cooked or 1 16 oz can of black beans mine were dried beans black beans place them on a cookie sheet place them in a 350 oven for 15 lions to dry so the soggy or mushy
  • in a bowl add beans mash with a fork,
  • 1/2 red pepper diced
  • 1/2 small onion diced
  • 1/2 cup bread crumbs
  • 1 egg
  • hot sauce your choice
  • lea and perrins sauce (Worcestershire )
  • garlic
  • salt and fresh ground black pepper

Mix with spoon the form in to bean patty’s I freeze mine until needed Remainder of black beans I cooked may go in to a Veg Chilli, one way I love black beans in place 1 cup per person in to microwave or pan to heat up add about 1 tbl spn malt vinegar black pepper add hot sauce to if you like enjoy ! Yummy a great snack on bonfire night Nov 5th BTW My Birthday is Nov 4th I always got Fireworks for my Birthday Hmm

Baked Beans

  • Place 2 cups dried navy beans in pressure cooker or soak overnight for about 10 hrs
  • 2 cups navy beans
  • Small can plum tomatoes oureed
  • garlic to taste I used 1 tbl spn
  • 2 tbl spns nutritional yeast
  • hot sauce
  • smoked paprika about 1 tbl spn to taste
  • give a stir and VIOLA you have baked beans , full of smoky goodness for these chilly days

When I roast my chicken I put a trivet in the bottom of the roasting pan , this elevates the chicken

The vegetables serve to impart flavour on the main ingredient as it cooks and can also be used to make a sauce for the final dish. I also halted an apple put half in the cavity of the chicken along with a small orange this will make the chicken juicy and very tasty .. Sunday dinners make me miss my mom (Mam) Sunday Dinners in our house were a family occasion

I am also making roast potatoes, Mash, Yorkshires and gravy, The grave tastes amazing! it isn’t the same cooking for just David and I , but these shifts are long and it is 7:30 by the time he gets home !! Cooking with Left overs

Today I took a look in the fridge there is leftover Minced Turkey meatloaf , some converted rice hmmm I chopped a celery stalk, a small onion, a small hot pepper, Swiss chard from our garden, cherry tomatoes from out garden, and parsley from our garden.. a little Garlic, fresh ground black pepper and a little sesame oil there you have tonights supper #Plant-based and #healthy #Cookfromscratch Jamie Oliver I would love to cook with you!!

Blast from the past

David was working yet again another long day at site.. Hmmm something hearty , healthy, I came across my Miracle maid electric Skillet, I still have it, Im going to do the first Miracle maid dinner we had, when we bought these pans 35 yrs ago.. Very nostalgic

I made a Turkey, Quinoa meat loaf, the original was with ground beef I used ground turkey this time , carrots, turnip and potatoes all done in the same pot.. Oh my gosh the smell was amazing and took me right back to when I was pregnant with Victoria and we bought this set of Miracle mad pans and we are still using them. David really loved supper

My Grandkids, My Family

We now have 3 amazing grand kids, they are everything to David! We love taking them on a road trip, doing fun tings Cooking with them is one of them, memories and teaching them a little about food and the nutrition! Most of all having fun times with them , Bailey and I one day will see Luke Bryan , See Ellen Degeneres .. Colin would love to meet and be on Top Gear lol Asher I think is going to be a hockey Player I have the most amazing husband in the world .. My family My world, my life

Then Asher was born july 6th I look forward to the sleep overs and making memories with him My mom would have just love these guys

Living so far away from family, your friends become your family, hence all the sons and daughters I have as i usually semi adopted their friends.. When I worked in the Hospital in Kitimat one of the first people I met was Ken Maggs, it was his first day in the Xray Dept and my first day in dietary, we got totally I invited him over for supper , we had a lot of adventures, lol on his boat down the Douglas Channel!! Most of all a true friendship was born, Katie was 18 months old whenI went to work at the Hospital, Now a mommy herself, uncle Ken and Christine sent Asher a gift this week, We may live in different provinces now but we do stay in contact .. It was food that forged this friendship!! Ken spent may a weekend with us..

Pan Haggerty again My Way lol

I love to cook, I love food, for 3 yrs now we have been pretty much #PLANTBASED I cook from Scratch, I have ben watching a BBC TV series or a few of them back in time the latest was back in time for tea and it takes place in the north of England, its about going back in time and how people lived and ate eat it is very interesting a recipe the made was Pan Haggerty , once again I made it my way it was amazing

  • 4 large potatoes sliced
  • 3 stalks celery diced and cook with onions
  • 1 large onion sliced and cooked
  • 1 cup cheese
  • 1/4 medium cabbage sliced
  • 4 rashes bacon diced and cooked
  • 1 1/2 cups Campbells mushroom stock
  • salt, pepper and garlic
  • a plod of Lea and Perrins
  • later in oven proof dish cover with cheese
  • bake at 365 for about 1 hour until crispy

Fish Pie with Cauliflower mash and Cheese Yummmy

  • I always remember my mom making fish pie with parsley sauce Yummy and a very creamy mash potatoes , she go out to the fish van when it cam around, bought i believe it was Haddock , some fish cakes and kippers for breakfast !! I make mine a little different , I use mashed Cauliflower instead of Potatoes sometimes and salmon and shrimp with a wee bit of smoked salmon to add a wee bit of a smoky taste Mmmmmm
  • 1 Lg Cauliflower
  • 1 carrot 
  • 2 sticks celery 
  • 150 g Cheddar cheese 
  • 1 lemon 
  • 4 sprigs of fresh flat-leaf parsley 
  • 300 g Cod or salmon fillets , skin off take out bones
  • 125 g raw shrimp with out tails
  • 1 cup of cream or if your watching your diet skim milk
  • 2 tbl sons flour to thicken
  • olive oil 
  • 1 good handful of baby spinach , optional
  • Cook Cauliflower , mash and put to one side add salt , pepper and a little butter
  • Grade carrot and dice celery , grate cheese also
  • place fish and shrimp in a pot with olive oil , cook until ready add parsley ,celery , parsley and shrimp add flour and cream or skimmed mils add a squeeze of lemon
  • place in oven proof dish , place mashed cauliflower go top of your fish mix, sprinkle cheese on top and bake 40 mins in a 365 oven

Food Matters Today I am cooking a Veggie Chilli …. With Kidney Beans, Black beans ans red Lentils, I start with a lge onion, garlic and a hot pepper I use a Jalepano !! I small can diced tomatoes, i can tomatoe paste, chilli spices Place olive oil in a pan .. slice and dice onion and pepper.. Place in open saute For this Chili I used Canned beans I drained the beans and rinsed them added them to Onion and poepper mix ! add tomatoes, tomatoe paste and chilli spices.. cook untill bubbling then simmer for 1 hour.. Mean while I cook my rice I use brown rice , or Quinoia .. I usually cook extra!! To go along with this I picked Lettuce and tomatoes out of the Garden for a salad and yeaterday I baked a baguette !

Lets talk about “Beans” Beans a great for the guts Microbiome !! full of Antioxidants , protein and fibrethere are many types of beans, chick peas, ot gabonzo beans I use these a lot.. Lentils red and green, Kidney beans red and white! Limabeans, black afew different types, pinto beand (refried beans) Navy or harricot beans. beans , peas, soya, peanuts and the list goes on …. They are a veryunderrated food , they may help to reduce blood sugar, can improve cholesterol, levels, aand help to maintain a healthy gut biome.. When we started this food journey 3 yrs ago David was on 3 different meds one for Cholerserol, one for Blood Pressure and one for gout, he suffered terrible with gout.. Now he doesn’t take gour meds or cholesterol meds !! We find eating plant based diet is helping us both with health and also with our budget !!
