Teriyaki Chicken and Breakfast with Jamie Clinch

We had a great Visit this past weekend From Janie Clinch unfortunately it was for a Dinner For Ten Jager , a very dear friend who loved fine wines and food… Jamie arrived Thursday Evening! When I get guests I like to prepare a few things for the fridge, So I made a pot of Spaghetti Sauce, and Teriyaki Chicken Drum Sticks. Great snack

  • 1/2 cupSoya sauce
  • 1/2 cup tomatoe Ketchup
  • 2 Tbl spn Worsershire sauce
  • 3 tbl spns brown sugar
  • 2 tsp minced garlic
  • some times I add Jalepano or franks red hot sauce

Marinate Chicken over night , pre heat oven 250 f, bake chicken in oven approx 1 hour , serve as a snack or with rice and a salad .. I remember when my Mom and Dad came out to Canada for the Birth Of Katie she is now 31!!! My Dad loved the Teriyaki Chicken so much…

A Cumbrian Christmas

Cumbrian Christmas bread

Cumbrian Christmas Bread Im def going to make this .. Sounds amazing

Ingredients

  • 30g currants
  • 30g sultanas
  • 55g raisins
  • 20g mixed peel
  • 3 tbsp rum or brandy

For the ferment

  • 6g active dried yeast or 7g fast action yeast
  • 10g caster sugar
  • 75g white bread flour
  • 150ml warm water
  • 100ml milk

For the dough

  • 400g strong white bread flour
  • 75g caster sugar
  • 2 tsp salt
  • ½ tsp mixed spice
  • 1 medium egg
  • 1 tbsp black treacle
  • 40g unsalted butter, melted and cooled a little
  • Vegetable oil for greasing

Method

  1. In a bowl soak the fruit and peel in the rum or brandy for at least 2 hours.
  2. For the ferment, sift the yeast (if dry) sugar and flour into a bowl, then whisk in the water and milk until you have a smooth batter. Cover with a lid or cling film and leave to ferment for 30-45 minutes or until risen and puffy.
  3. For the dough, sift all the dry ingredients together into a large bowl. Make a well in the centre and pour in the egg, treacle, melted butter and the ferment. Mix well with a wooden spoon until a rough dough is formed (if the dough still seems a little dry after mixing, add a 2 tbsp of water and continue). Knead for 8-10 minutes until the dough is smooth and silky (by hand or machine). Drain the fruit of any excess liquid and gradually work it into the dough at the very end of the kneading time.
  4. Put the dough in a large well-oiled bowl, cover with cling film and leave to rise for 2 hours. The dough should be nicely risen and feel airy, but will not quite double in size.
  5. Preheat the oven to 200C/fan 180C/gas 6. Remove the dough from the bowl and form into a smooth round loaf. Put on a baking tray lined with baking paper, cover with a clean tea towel and leave to prove for about 30-45 minutes. Check the dough is ready to go into the oven by pressing it lightly with a finger. If the impression left by your finger remains, the dough is ready. If it springs back, continue to prove for another 5-10 minutes and check again.
  6. Bake the loaf for 35-45 minutes, covering with foil if it looks like it is getting too brown. Check if it is done by tapping on its bottom and listening for a hollow sound. Cool on a rack before. Serve warm spread with lots of butter.

  • 2 lb pork shoulder
  • 5 oz bread crumbs
  • 1 tsp black pepper
  • 5 tsp salt
  • ¼ tsp nutmeg

  • 1 tsp sage

Cow Pie or Steak n Kidney pie as I know it

Creamy Red Pepper Alfredo Pasta

I do apologise I haven’t done an awful lot on my food blog , but promise will catch up , Surgery went well, now just lets recover 100% This is An incredibly creamy, rich Alfredo sauce made with roasted red peppers and crab meat, it takes just 20 min to make from start to finish! I made this for the freezer a month before my surgery !! It is amazing

I love Red Peppers so I decided to make this amazing Red Pepper Alfredo Sauce with Crab, you can add what ever protein you like !

  • 6 large red bell peppers Seeds taken out and diced
  • 4 tablespoons minced garlic
  • 1/4 cup fresh basil
  • 3 tablespoons extra virgin olive oil
  • 4cups half-and-half (Light)
  • 1/4 cup grated parmesan cheese
  • I small tub cream cheese
  • 4 tablespoons butter
  • salt and pepper to taste
  • 1 large onion diced
  • 2 cans crab meat or fresh your choice
  • Add all ingredients to list

Seafood Chowder a true gift from the sea once again my way

TodayI made a Seafood Chowder full of goodness,, 4 rashers bacon diced, I large Clams and Clam juice, 1 large can of diced tomatoes , 1 can of tuna in water and 1 can of canned salmon, large bag of frozen shrimp 1 pkg Knrr Veg Soup mix, 2 celery stalks, 1 large Onion, 2 large Carrots and 6 Medium potatoes diced , 1 tbl spoon minced garlic, sprinkle of dill fresh ground black pepper 2 cups water, olive oil . In a large soup pt I put in Olive oil and diced bacon to cook once cooked add all the chopped veg, one these are cooked I add he tomatoes, can of Clams, tuna drained and salmon drained place in pot, add shrimp . bring to boil them simmer for about 1 hour now your delicious Sea Food Chowder is ready, with fresh bread I made and a salad, amazing for these Minus Temps here in Fort McMurray I am going to freeze some for future meals and lunches

Refrigerator Pickles

Busy Sunday , I finally got to make the Refrigerator Red Pickled Onions, great Christmas Gifts, I usually make Christmas Pickles along with The Red Pickled Onions , and some baked goods and put a few pkgs together for friends.. Asher and Kate are coming over for Supper today , I also baked bread and Banana Bread for Desert.. Were not having a traditional Sunday Dinner today as the weather is so nice we are BBQing some Pork Steaks, I will make my warm Potato Salad

We also put up the Christmas Decorations this weekend, as I go for my op this next week .. Thinking positive .. Wearing my Christmas Leggings !! This little man and his mom are coming over for Supper ..

I always have a jar of Red Onion Pickles in my fridge as they are great onPizza, Tacos, salads Burgers, Sandwiches fave is red pickled onions on a grilled cheese .. I only use red onions for my picked onions, but yellow or white onions can be used as well. Of course you won’t get that lovely bright-pink color,

Ingredients

  • 4 cups sliced red onion
  • 1 clove garlic
  • 3 Tbsp brown sugar
  • 1.5 Tbsp salt
  • 1/2 tsp peppercorns
  • 1/2 tsp Mustard Seed
  • 3 cup red vinigar
  • 1 cup Apple Cider Vinigar
  • 2 springs of rosemary

Put the Vinigar and Sugar in a pot bring to the boil them simmer for about 10 mins, in a dish place sliced red onions, spices, garlic and rosemary , pour hot liquid over the onions and let cool, once cool place in jars and keep in the fridge

Christmas Pickles for these I used a white Vinigar , white sugar cucumbers sliced, dill , garlic and jalapenos , these have a little kick with them ..

Moussaka My Way

  • Today I made an amazing Moussaka.
  • 1 lb ground chicken browned and add rosemary, black pepper and garlic with 1 bay leaf and a pinch of all spice
  • 1 lg onion diced
  • 1 green pepper diced
  • 2 large tomatoes diced
  • 1 tbl spoon garlic
  • rosemary pinch to taste
  • parsley pinch to taste
  • a little basil to taste
  • 1 cup of red wine
  • a little allspice cook all veg and add spices and red wine
  • 4 large potatoes boiled whole then sliced
  • 1 large egg plant sliced thin sprinkle with salt and olive oil them bake for 20 mins oven 350 f
  • Sauce
  • 1 cup of flour 1/2 cup butter make a roux, add 3 cups whole milk, garlic salt and pepper , add cheeseI added garlic herb cheese 1/2 cup and 1/2 cup crumbled feta, make sauce
  • in and oven proof dish place a layer of sliced potatoes them plate ground chicken mix on top.. layer egg plant and place the sauce on top with a sprinkle of feta cheese salty good ness bake in a 350 /365 oven for 35 mins then take out and let cool a wee while then ready to serve this is amazing

I watched Jamie Oliver make this dish once again I improvised and made a few wee changes def a family fave when you make it take a pic and let me see your creation .. Now what tomorrow Im not sure have a great Thursday evening .. Now Shower and Hot tub

With the Chicken stock from the Harissa Chicken, and 2 extra Chicken Breasts I made delicious, healthy Chicken soup. I cooked the chicken breast in butter, and fresh ground black pepper… In soup pot, I placed 1 onion diced, 1 large leek diced, 2 large carrots diced 3 large parsnips dices and cooked in olive oil until soft then I aded the chicken stock , 1 pkg of onion soup mix, garlic. 2 cups of egg noodles, salt and pepper ,Bring it to the boil them simmer for 30 mins , the Soup pot is 3/4 full so I have a lot of soup, I divide the soup in to containers for the freezer, this is a great lunch or supper for these cold winters nights.. My mom was amazing at making soups, I think i j=have inherited this from her…

Bone Broth

Ingredients:

1 small chicken, beef, lamb, pork
2 carrots, chopped
2 celery, chopped
1 small onion, chopped
2 tbl spoon crushed garlic
3 sprigs of thyme or dry
1 tablespoon apple cider vinegar, great for water retention
1 bunch parsley, chopped
Filter water, enough to cover chicken and vegetables, what ever meat bones you have use them

Sunday Dinner to day is 2 Harissa Chickens

Kate was going to come over for Sunday Dinner, instead we are taking Sunday Dinner ti Kate and Aaron oh and the wee man Asher . To start we are having Lentil soup a quick and very budget friendly soup. 1 1/2 ltrs Veg stock, 1 onion, 1 1/2 cups red lentils, garlic, salt and pepper .. then when cooked about 40 mins. Then I blended the lentils , it is amazing ,, I made a Guyere red onion and rosemary flat bread to go with the soup

I made this Jamie Oliver Harrisa Chicken a couple of weeks ago, it was a hit . This time I’m making 2 chickens. With the chicken carcas I boil it and make chicken soup, i will make a big soup pot and freeze some for after my surgery! Once chickens are cooked i will post more pics.. The smell of the chickens cooking if amazing !! This dish is a simple dish to prepare .. i am going to try this with chicken thighs , a great dish for entertaining .. Happy Sunday y’all

Poultry mans Pie

I always try to think out of the box when cooking , today I have 1 lb ground chicken, what can I make Ta Daaaaa got it! I browned the ground chicken in a pot I placed light olive oil, 1 onion diced, 1 large Leek sliced and diced, 2 carrots dices 1/2 cup of frozen peas and cooked until soft , I then added the ground chicken a little chicken stock 2 tbl spns light sour cream, leave in pot to simmer ,, In another pot I diced 2 parsnips, 1/2 a small turnip diced, 2 large carrots sliced, and 5 medium potatoes diced , cook until soft then mash with a little butter salt and fresh ground black pepper . place Chicken mis in an oven proof dish layer the potato veg mash over the ground chicken , melt some butter and brush over the mash mix place in 165 f oven and bake for 30 to 45 mins until golden and crisp on top.. Once cooked I will add another pic

Millet is also gluten free and has amazing benefits to your health

Ancient Grain Banana Bread I came across this recipe so i will try this as I love Banana bread

This ancient grain banana bread is one of those recipes that doesn’t compromise on flavor in spite of it having ancient grains. And, you cannot tell it is gluten free!

Ingredients
• ¾ cup quinoa flour
• ½ cup oat flour
• ¼ cup almond flour
• ¼ cup millet flour
• ¼ cup sorghum flour
• ¼ cup amaranth flour
• 2 tablespoons flax meal
• 2 tablespoons tapioca starch
• 1 teaspoon baking soda
• 1 teaspoons baking powder
• 1/2 teaspoon salt
• 1 teaspoon vanilla
• 1 teaspoon cinnamon
• ¼ teaspoon nutmeg
• 1/2 cup oil
• 1/2 cup raw sugar
• 2 cups mashed overripe bananas
• 1/2 to 2/3 cup chocolate chips (optional)
• 1/2 to 2/3 cup chopped walnuts

Directions
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease 1 9×5 inch loaf pan.
2. Since I didn’t have quinoa and oat flours on hand, took ½ cup quinoa and 1/3 cup oats and made flour.
3. In a large bowl, combine all flour, baking soda, baking powder, and salt. In a separate bowl, cream together oil, vanilla, cinnamon, nutmeg, and raw sugar. Stir in mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten.
4. Stir in nuts and chocolate chips into batter and pour batter into prepared loaf pan.
5. Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

There are few simple secrets to making the perfect loaf of ancient grain banana bread.
1. You have to mash the bananas by a hand tool. Do not use any machines. A fork or a potato masher like I’m using will do the trick.
2. The amount of mashed bananas should be just a little less than the combined flour.
3. The combined flour plus flax meal plus tapioca starch should be 2 ½ cups. If you don’t have any one of the flours then use more of the other till you get 2 ½ cups.
4. Do not add any other liquid like milk etc. Just add oil that’s it. I cant wait to try this recipe ,

Stuffed peppers,

Left over rice hmmm I think I will do stuffed pepper, quick and delish You can add what ever you like to the rice, I added 1 can of light tuna, garlic, onion diced, celery diced a hot pepper diced ( Don’t rub your eyes after you have handled hot pepper.. Salt fresh ground black pepper a sprinkle of Soy Sauce, and a little smoked paprika, once rice is done place in the peppers , I sometimes ad feta cheese, i didn’t this time .. I caked in a 350 oven for about 25 mins , i served with a home made soup, yup today a Red Bell pepper soup amazing , tasty and so healthy , thank you Sobeys for the great produce !! This is a flavourful meal.. Cooking most of our food from scratch becomes a habbit,

  • I also made 2 Cottage pies with ground chicken haricot beans and black beans, onions , celery , 2 large tomatoes added veg stock , once cooked placed in oven proof dish, in another pot I diced 1/2 a medium turnip and 3 large carrots sliced and 8 medium potatoes, cooked until soft and them mashed with butter and a little sour cream , placed on top of the meat and bean mix .. with the stock left over I made a very tasty gravy!! I served this with a fresh herb baguette oh my the flavours . I cooked in a 360 oven for about 40 mins until crispy and golden .. Eating #Plantbased and making most of our food from scratch is amazing.. I am heading ti to this surgery feeling well and very positive , by eating this way has postponed this surgery .. As usual I make little changes. I made a double batch. this soup is full of ofdifferent flavour levels Oh my gosh a must to try
  • !/2 cup diced onion
  • 2 carrots diced
  • 2 stalks celery chopped
  • 1/4 cup butter
  • 3 teaspoon curry powder
  • 2 tbl spn flour
  • 1 tsp Cumin
  • 1 small apple cored and chopped
  • 1/4 cup millet or rice
  • salt to taste
  • 2 tsp chopped garlic
  • fresh ground black pepper
  • 1 pinch of cream
  • 1/2 cup plain Yogur
  • 7 cups chicken stock
  • Saute onions, celery, carrot, and butter in a large soup pot. curry, cumin salt pepper and garlic, flour and cook 5 more minutes. Add chicken stock, mix well, and bring to a boil. Simmer about 1/2 hour.
  • Add apple, millet, chicken, salt, pepper, and thyme. Simmer 15-20 minutes, or until rice is done.
  • Serve with a dollop of yougurt It smells and tasted amazing

Davids BBQ Ribs My Macaroni salad and 2 x baked potatoes & fresh bread

my Macaroni Salad varies from time to time ,

1 1/2 cups macaroni, today I chopped 3 spring onions( Green Onions) some times apple or celery but the most part its onions Aged cheddar, a good 2 tsp horseradish, seasoning salt and mayo some times instead of horseradish I use wasabi its amazing

I baked bread and am boiling 4 medium potatoes , and making twice baked potatoes , to do this you boil potatoes with the skins on them I will half if they are large today I didn’t I boil them approx 45 mins then run cold water r over them to cool. once cool, I half the potatoes, scoop out the centres an place in a large dish, add you fillings , your choice, I love adding tuna and green onions always a little garlic to the potatoes and fill the potatoes skins and sprinkle cheese on top bake in oven 25 mins or so until crispy and golden. David really loves these quite often this is our main meal along with a garden salad of veggies and dip ..

David takes great pride in his ribs some times smoked ribs some times BQ ribs not sure todays .. Oh boy what else can happen , the water tank is leaking so David is fixing it so I’m doing the ribs never done. Ribs before. So here goes! I will tell you after supper how they were.. OG MY GOSH!!!! They were so tender and amazing with a little smoky Flavour !!

  • Marinade
  • tsp salt
  • tsp garlic tsp onion salt tsp chilli powder

I love to cook, I love food, for 3 yrs now we have been pretty much #PLANTBASED I cook from Scratch, I have ben watching a BBC TV series or a few of them back in time the latest was back in time for tea and it takes place in the north of England, its about going back in time and how people lived and ate eat it is very interesting a recipe the made was Pan Haggerty , once again I made it my way it was amazing

  • 4 large potatoes sliced
  • 3 stalks celery diced and cook with onions
  • 1 large onion sliced and cooked
  • 1 cup cheese
  • 1/4 medium cabbage sliced
  • 4 rashes bacon diced and cooked
  • 1 1/2 cups Campbells mushroom stock
  • salt, pepper and garlic
  • a plod of Lea and Perrins
  • later in oven proof dish cover with cheese
  • bake at 365 for about 1 hour until crispy

Family Tradition

Just came across these pics it is something my mom did every easter Starting in Dec shed start saving Onion Skins the darker the better . They were Called Pace eggs I thought the world did this until we emigrated to Canada and it is very much a Northern England tradition

Pace-Egging is an ancient Lancashire custom once widespread, and is still to be found in parts of the county today.

Pace-Eggs are eggs specially decorated for a festival at Easter-time, and is a centuries old tradition.

The eggs are first wrapped in onion skins and boiled, giving the shells a golden, mottled effect. This is the traditional way of decorating the eggs, though today they are often painted.

Pace-egging was taken seriously…for example in the household accounts of King Edward I there is an item of ‘one shilling and sixpence for the decoration and distribution of 450 Pace-eggs!’

At Grasmere, Cumbria, in the Wordsworth Museum there can be seen a collection of highly decorated eggs originally made for the poet’s children.

Usually Pace-eggs were either eaten on Easter Sunday or handed out to the Pace-Eggers.

In Avenham Park in Preston the crowds still gather today to watch the old traditional egg-rolling contest down the grassy slopes.

The eggs are hard boiled and then decorated, and hundreds of children today compete to see whose egg can roll the furthest without cracking.

A warning to all… empty Pace-egg shells must be crushed for they are popular with Lancashire witches who use them as boats.

Who Said Hospital food is bad Not I

Back in the 90’s I worked in the hospital in Kitimat BC in Dietary as a Dietary aide, I loved it, I learned aot ! I worked with some great ladies, we all worked very hard , I even got to be relief cook 1 and 2 .. I learned a few swear words in Mexican & Portuguese. I got a couple of really great recipes one of which my kids and grand kids love, Tuna Roll.. I make my own scone mix 2 small can tuna in water, i can mushroom soup ….

  • 3 cups of flour
  • 2 tbl spn olive oil’
  • 2 tbl spn baking powder
  • pinch salt
  • 1 cup milk
  • little water
  • mix together dry ingredients
  • 2 cans Tuna in water
  • 1 can mushroom soup use half
  • Roll out to 1/4 inch nd spread tuna mix
  • bake 375 for approx. 30 mins
  • Cheese sauce mmmm
  • 2 oz butter
  • 3 tbl spoons flour
  • 2 splods Hot Dog mustard
  • 1/2 cup grated cheese old cheddar
  • 1/4 cup grated asiago cheese to add a nip
  • 1 tsp chopped garlic
  • make a rue with melted butter and flour
  • 1 cup milk
  • add milk slowly

Mediterranean Pie another Hospital recipe

  • 2 pie crusts
  • 1 med onion chopped
  • 1 tsp chopped garlic
  • 1 bl spn minced garlic
  • 1 oz butter1 12 oz pkg frozen spinach
  • 8 oz sliced ha8 os shredded cheese I like cheddar
  • red pepper cut in to strips
  • 4 eggs slightly beaten
  • Drain defrosted spinach well and stir into onion mixture.
  • Layer, in order – ham, cheese, spinach, red pepper.
  • Pour beaten eggs over the layers. Reserve a small amount of egg to brush on top crust.
  • Put top crust on the pie.
    Decorate with left-over pastry if desired.
    Seal edges. Brush with reserved egg. Make slits for steam.
  • Bake at 400 degrees F. for 35-40 minutes or until pastry is golden.
    serves 4-5
