Each of these potato topped pies consists of meat, mashed potatoes and if you like, though not traditional, a little cheese sprinkled on top. Significantly different in the Cumberland Pie, it has an extra layer of toasted breadcrumbs and cheese which is mixed either with the mashed potato or the breadcrumbs; again it is a case of personal preference,

A little history on a Cumberland pie, I found on the web.

The Cumberland Pie may have become no more than a dressed up Cottage Pie sprinkled with cheese and breadcrumbs, but its history goes so much further. The pie has its roots in medieval times when it would be made with a variety of meats, Herdwick mutton, or perhaps game, dried fruit and sweetened but not sugary by the use of apples in the recipe and spices. This mix of meat, spices, and fruit is not dissimilar to the original Mince Pies once made by a similar filling and not to be confused with the Christmas mince pies we are so familiar with today.

In medieval times, the pie was a pastry crust and not potato as we know it now. Why and when it changed to potato is not known.

Ask anyone in Britain for a Cumberland Pie and you will get the modern version, except in and around Cumbria and the Lake District in the North West. This region is the home of the pie and thankfully where it still exists. It is eaten and enjoyed by locals, tourists and those walking in this beautiful part of the United Kingdom. Rarely will you find one outside of the North West, which really is a shame.

Lazy Man’s Cabbage Rolls

Lazy Mans Cabbage Rolls or Holopshy . Very budget Friendly I used Ground Turkey .420 kg , 1 cup of Rice, 1 Large Can of tomatoes, 1 medium cabbage sliced thin, 1 small onion diced ,Worstershire sauce , mustard powder, 3 cloves of garlic diced, fresh ground black pepper . place some tomato and juice on the bottom of the roasting pan. place a layer of onions and cabbage in the bottom of the roasting pan, place the rice and ground turkey mis, layer it over the Cabbage, then place another layer of sliced cabbage and onion over the turkey Rice mix . add 1 cup of water to the tomato and spice mix and pour over the cabbage, leave in refrigerator until tomorrow. you may also ad a can of tomato soup ..Bake in a 360 f oven for approx. 1 .5 hrs , serve with sour cream

I used ground Turkey you can use what ever meat you like , I have only used 1/2 the amount of meat. some times I mix peppers with the cabbage. This is one of Davids fave meals. Im not sure where i first had this, I do know it was in Kitimat. Possibly got it from someone at the hospital when I worked there, in Dietary , I loved that job..

Fish and Chips , if ever you go to the UK you have to try their fish and chips , yummy Best place to eat fish and chips is by the Sea.. Bangers and Mash is another British fave .. Most pubs have this their menu .. The Full English Breakfast This breakfast usually includes: bacon, sausages, eggs, baked beans, toast, mushrooms, tomatoes, hash browns and black puddings. Then you have the Sunday Dinner a roast, Yorkshire Puddings , roast potatoes, mashed potatoes and a couple of veggies. Toad in the Hole I made last-night . Shepards Pie or Cottage pie, I have a few variations of this.. A good Old Cumbrian Hotpor made with lamb and black pudding. Ohhhh Steak and Kidney pie I love this The ingredients include: beef, kidney, fried onion and gravy all wrapped up in pastry, probably not the healthiest but oh so good

Never Fail Yorkshires

  • 450ml milk
  • 4 large eggs
  • 250g plain flour
  • 2 tbsp sunflower or vegetable oil or shortening

mix together the milk, eggs, flour and 2 tsp salt in a food processor or blender until you have a smooth batter. If you don’t have a food processor or blender, whisk the eggs into the flour and salt, then gradually whisk in the milk until smooth. Transfer to a jug, cover and leave at room temperature for at least 15 mins. Heat oven to 400 F and brush 12 holes of a muffin tin with the oil. Heat the tin cook for a further 25/30 mins until puffed, risen and golden. Most eaten with HP Sauce, pickled Onions, Malt Vinegar on your Chips Salad Cream on your Salad and end with a Cup Of tea.. Oh boy I am homesick..

Me Cooking #Stressrelief

This is a very scary time for the world, lets try to stay healthy, eating Veggies and fruits, respecting the #SocialDistancing #WashingHands.. I have been doing a lot of cooking this past 2 weeks, home made soups, veggie pasta sauce, bean stews, Last night I made Scotch eggs, and Toad in the Hole.. I think my batter was a little to thick , Cooked that with Duck fat and boy did it taste amazing . The scotch eggs I added my home grown parsley and oregano in the mix.

Ingredients

  • 1 broiler/fryer chicken (3-1/2 to 4 pounds), cut up
  • 10 cups cold water
  • 5 chicken bouillon cubes
  • 6 whole peppercorns
  • 3 whole cloves
  • 2 large chopped carrots
  • 1 cup fresh or frozen peas
  • 2 stalks chopped celery
  • 1 cup chopped peeled potatoes
  • 1 large chopped onion
  • 1-1/2 teaspoons seasoned salt
  • 1/4 teaspoon pepper
  • 1 bay leaf optional
  • DUMPLINGS:
  • 2 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 large egg, beaten
  • 2 tablespoons butter, melted
  • 3/4 to 1 cup whole milk
  • Snipped fresh parsley, optional

Place the chicken, water, bouillon, peppercorns and cloves in a stockpot. Cover and bring to a boil; skim foam. Reduce heat; cover and simmer 45-60 minutes or until chicken is tender. Strain broth; return to stockpot. with veggies and chopped chicken Good Home Cooking

Chicken with a Truffle oil and Herbs De Provence

David Heads Back to work today for 14 ,13 hour days then an hours drive to and from work.. So I got a chicken and rubbed a little truffle Oil and Herbs De Provence , I placed the chicken on a trivet of Onions and Carrots , 2 chicken stock cube and water.. The Smell of this cooking is amazing.. David asked for just chunky boiled potatoes with a little butter on, I also did Brussel Sprouts.. I had plans to make a chicken n veg pot pie with the left overs!! Not so As there isn’t enough left LOL Zoo I am doing a Veggie Fried Rice tonight with the left over chicken lol

Pork Madras Curry Yummy

  • Today, I wanted to cook yet again, I decided to make a Madras Pork Curry, Naan Bread , reg bread and David wants the Curry with Chips ( Fries ) Like the good old British way Curry n Chips.. There are a lot of Veggies in the curry, the meat is an ingredient, this curry tastes amazing .
  • 4 Roma tomatoes, 2 large onions cut in to chunks
  • 2 stalks Celery sliced chunky
  • 1 large green pepper cut chunky
  • 1 cup of peas
  • 4 cloves of garlic, 12 oz pork cut in to cubes
  • Madras Curry Spices
  • a little Coconut oil
  • Fresh ground Black Pepper

When we were back in the UK, David was working At Cortaulds as a weaver, once in a while he would bring Curry Chips back yummy.. I try to replicate that..   • celery sticks, sliced into 1cm pieces

  • 2 really big carrots, halved lengthways then chunkily sliced

  • 2 tbsp vegetable oil
  • 1 tbsp butter
  • 2 tbsp each plain flour, tomato purée and Worcestershire sauce

  • 1 lb Chicken, beef or pork cut in to small cubes

  • 1/4 cup each mature cheddar and parmesan, finely grated

A Veggie Pasta

This morning, I thought lets get right back to plant based, so I looked through my veggies and decided to male a Veggie Pasta Sauce, I originally saw Jamie Oliver doing this a few yrs ago,

  • 2 large Zucchini sliced thin
  • 2 large onions diced
  • 2 large carrots diced
  • 2 large leeks diced
  • 4 plum tomatoes diced
  • 8 loved garlic diced
  • 4 red peppers diced
  • 2 large cans tomatoes
  • 1 can tomato paste
  • 500 mis veggie stock
  • oregano from my garden (froze it )
  • Italian seasoning
  • fresh ground black pepper

I sliced and diced the veggies salted in a little olive oil once cooked I pureed the veggies in to an amazing pasta sauce, I will place in large freezer bags and flatten them and freeze as this takes up less room in the freezer . I will make fresh pasta, home made baguette and a green salad oh and lots of fresh grated parmesan cheese

Birthday Weekend for David

This weekend is Davids Birthday, When it is a family Birthday, I cook what they want … David wants a BBQ, even though he is having red meat we are just having small steaks, along with my Macaroni Salad, warm potato salad and a veggie tray. Most important family, the grand kids Colin, Bailey and Asher along with Ian, Kate and Aaron .. George is going to love having the kids over.. I will up date tomorrow , lets get this party started . Table set, steak marinating, potatoes n eggs on all ready for the warm potato salad.

Quick Satay Sauce

I had no idea what to make for supper. I looked in the fridge saw mushrooms and peppers. Ahh. I’ll make a Sarah sauce. I used Veg stock, light sour cream and wow no peanut butter. It was amazing. I served with wild rice.

Cooking from the Heart

I know this may sound Corny!! This is how i cook, I will sometimes look at a recipe but sadly ever follow one.. I find a recipe is a guideline When I decide I want to cook, I think what should i cook then , I feel what needs to go in the dish!! My Pasta Sauce , Many yrs ago when David was in the pipe band, we had just bought our first house #32 Morton St. A chap from the band came over for supper and showed David how he made pasta sauce a can of tomato soup, onions and ground beef.. Boy has this sauce evolved. It was Davids baby, I have since took this over.. Miracle food the Chowmein , Spring Rolls I love making Vegetarian ones using cabbage, onions, carrot rice wine vinegar, 5 spice and garlic Yummy But I am going to make Irish Spring rolls adding a little lamb and mint sauce. The miracle maid dinner, we were shown how to do this 35 yrs ago, Most of the time I do this with ground chicken or turkey add onions, sage egg and rice .. Since we are 80% Plant based , I love to experiment with food.. A veg stew is a great example. My Soups, another great example.. If we eat out and taste something we really like we love to try and replica the recipe.. My Mushroom soup is amazing I never know what mushrooms Im going to use until I hit the produce isle.. I love when Colin and Bailey come over and we cook together the heart of a home is the kitchen .. David brought Beef shank home one day, I had never cooked with them, I looked up how to cook them, I made a beef Shank stew with leek, carrots, turnip and a few potatoes, left overs made the most amazing curry ever.. Cooking is a stress reliever for me also Crocheting my #Hugs4Cops Blankets and Cushion covers . When David and I cook together , we don’t have to tell each other what to do, we just do it.. We are coming up to our 45 wedding anniversary , We want to renew our vows..

I see a Sea Food Chowder the smell is amazing

  • 900 ,ls veg stock,
  • 1 pkg veg soup mix,2 large leeks diced
  • 3 large carrots diced
  • stalk fennel with the bulb sliced
  • 1 large Onion diced
  • 4 medium potatoes diced
  • 2 tbl spoons garlic minced
  • 2 rashers bacon diced
  • 2 cans clam nectar

Cook bacon and onions in soup pot, then add all other veggies let cook a wee while , then add tomatoes tuna and all other seafood, fresh ground black pepper , bring to the boil then let simmer a few hours.. Going to make bread and serve with a crusty baguette Yummy David will love this when he wakes up from his night shift 7 more to go.. Like my mom would say this will stick to your ribs! a Hearty soup full of goodness. I also made home made cheese biscuits ( Scones)

Fajitas Mmmmmm Mexican food love it

Bricks 4 Kidz Here in Fort McMurray had in school classes yesterday for 2 Grade 2 classes “BUOYANCY” I rushed home to get the Fajitas ready for David going on night shift, I really have to start making my wraps, Ian and David enjoyed this Mexican treat. We don’t have these to often , when we do we love it . I used 2 small chicken breasts sliced and marinated in salt, pepper and garlic then cooked in Olive Oil. in another skillet I added 1 red pepper, green pepper and an orange pepper and 1 onion sliced, cooked in olive oil until softened added cooked chicken, the added home made Fajita sauce, served with Cesar Salad,Shredded cheddar cheese, taco sauce, salsa, guacamole and sour cream. There is enough left for another 4 meal

  • 4 tablespoons olive oil,
  • 2 tablespoons Lime juice Fresh if possible
  • 1-1/2 teaspoons seasoned salt
  • 1-1/2 teaspoons dried oregano I use frozen from my garden
  • 1-1/2 teaspoons ground cumin
  • 1 teaspoon garlic Minced
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon paprika I like Smokey Paprika
  • 1/2 teaspoon crushed red pepper flakes, optional

A recipe I got, when I worked in Dietary in a Hospital

This is Tuna Roll I added crab with this and an asiago Cheese. In the hospital we served this with Asparagus, I served with Brocholi

  • 3 cups Home Made Biscuit Mix ( Or Bisquik )
  • 1 can of Tuna and I can Crab meat
  • 1/4 cup asiago
  • 1/2 can mushroom soup
  • 1 cup buttermilk,
  • 1 tbl Spn hot dog mustard
  • 1/2 cup shredded cheddar( I use low fat )
  • garlic to taste
  • 2 tbl spns flour
  • olive oil or butter to a make a rue for cheese sauce

Mix up biscuit mix ( Scone Mix)

Mix Tuna, Crab and Soup add salt and pepper to taster and a little garlic .. Roll our B biscuit mix ( Scone Mix) to 1/4 inch thisck

This is one of our fave plant based meals A Portobello Mushroom Burger! A Layered Salad and a home made buttermilk Cesar Dressing home made .. We marinate the mushroom in garlic oil before BBQing the Mushrooms.. We add a slice of Aged Cheddar!! For this meal I thank #Western Family and their great Save On Store here in Fort McMurray !!

I have a few Mushroom recipes I love like my Mushroom Soup. or a Mushroom Stroganoff

  • 2 tsp olive oil
  • onion, finely chopped
  • 1 tbsp paprika
  • 2 tsp minced Garlic
  • 300g mixed mushroom, chopped I like Oyster, Crimini mushroom, white and Chanterelle mushroom. your choice
  • 150ml vegetable stock
  • 1 tbsp Worcestershire sauce,
  • 3 tbsp low-fat soured cream
  • small bunch parsley, roughly chopped or dried parsley
  • 1 cup of rice I like brown rice or wild rice
  1. Heat 2 tsp olive oil in a large Skillet and soften 1 finely chopped onion for about 5 mins.
  2. Add 1 tbsp paprika and Minced garlic, then cook for 1 min . Add 300g mixed mushrooms and cook on a high heat, stirring often, for about 5 mins.
  3. Pour in 150ml vegetable stock and 1 tbsp Worcestershire sauce
  4. Bring to the boil, simmer for 5 mins until the sauce thickens, then turn off the heat and stir through 3 tbsp low-fat soured cream and most of the small bunch of roughly chopped parsley. Make sure the pan is not on the heat or the sauce may split. Budget friendly and delicious #PlantBAsedDiet
